I want some GF S’mores!

Do you ever crave a yummy graham cracker to make s’mores or pie crusts? Well you’re in luck. Kinnikinnick, which makes some of my favorite GF baked goods now offers S’moreables “graham style crackers.” They are a little smaller and more crumbly than normal graham crackers, but they will do the trick.

I made s’mores using the S’moreables in my toaster oven. I took two graham crackers, put in a GF marshmallow (made by Elyon) and a piece of a chocolate bar in between and broiled it for a few minutes. The first time I made it, the top cracker cracked, so the next time, I made it without a top cracker.  All of these products can be found at Whole Foods.

Slow cooked pulled pork served atop creamy parmesan polenta

Recently I’ve been using my Crockpot, or slow cooker, quite a bit to create meals to bring for lunch. It’s also an excellent way to cook a meal for a party when you don’t have time to prepare something after work. I’ve made everything from jambalaya, to chicken curry and this pulled pork recipe.

I served the pulled pork on top of pre-cooked polenta, mixed with parmesan cheese and a half cup of almond milk, with coleslaw on the side. It can also be served as a sandwich, in your favorite GF bun. You can cook this the night before you want to serve it, as it tastes great the next day. Here’s the recipe to feed about seven:
 

  • 4.5 lbs pork shoulder (or boneless if you can find it)
  • 1 yellow onion
  • 2 tablespoons olive oil
  •  1 cup apple cider vinegar
  • 1 cup of ketchup
  • 1/3 brown sugar
  • ¼ cup molasses (light or dark will do)
  • 2 tablespoons of chili powder
  • 2 tablespoons of Worcestershire sauce
  • 2 teaspoons dry mustard
  1. Heat a frying pan on medium-high and add 1 tablespoon of olive oil. Brown the pork (about 8 minutes) and transfer to the Crockpot.
  2. In a large pot, add the remaining olive oil. Sauté the onion, for a few minutes, until brown. Add the vinegar, ketchup, brown sugar, molasses, chili powder, Worcestersire sauce, dry mustard and add salt and pepper if you desire. Cook until it begins to boil and then pour it over the pork in the Crockpot.
  3. Depending on how much time you have, you can either cook it on high for 3.5-4 hours, or on low for 8 hours.
  4. Using forks, shred the pork (it should be very tender and easy to shred). If you had pork with bones in it, pull them out.
  5. Serve over polenta, or in a bun.

Carl’s Jr. offers gluten free foods!

If you’re like me (and Shaun), then you can probably justify spending a small fortune on GF foods at upscale markets or bakeries. Well now I can say that there is a fast-food alternative! Carl’s Jr. has put out information on GF ordering on their website: http://www.carlsjr.com/menu/indulge. Basically, you can order a burger wrapped in lettuce and a side of their natural fries. They even have a coupon for a free side salad when you order a GF burger. Trader Joes GF list

My good friend, Charity, went to Trader Joe’s and picked up a complete list of gluten-free foods the chain carries. I checked out their website, and you can also download it: http://www.traderjoes.com/attachments/NoGluten.pdf.

The list has foods ranging from bakery items, to bars, beverages and desserts. This is a great way to ensure the products you buy are GF!

ordering and making au jus

Restaurants serve many meats with au jus sauce, in other words, the juice from the meat. Often times, au jus contains soy sauce or flour for thickening. When ordering out, make sure to ask if it contains gluten.

If you’re cooking at home, you can try a variation on the au jus – you can add red wine to the meat’s juice. Another sauce I suggest is making a red wine reduction by boiling wine (great use for leftover or days old wine) with corn syrup. For every cup of wine, add one tablespoon of corn syrup and boil until it’s reduced to a syrupy sauce. This goes great on beef!

Ordering GF Sushi

At one time, sushi was simple – rice and fish. As its evolved and become mainstream, its also become less gluten-free friendly. Sushi restaurants and Japanese chains have added tempura batter, or panko, to many of their sushi rolls to appeal to the masses. Many people have insisted that panko is made out of rice flour, but this is simply not true. Panko is made out of bread crumbs and it’s usually added fried foods, such as tempura.

When ordering at a Japanese restaurant, you have to watch out for eel sauce, imitation crab, miso and soy sauce. When I order, I make sure to tell the waiter or waitress to leave off any tempura batter and brown sauce(s) and I ask for real crab. If you are severely allergic, you may want to avoid sushi all together, as cross-contamination is highly likely.

Miss Cup O’Noodles? Well, you’re in luck…

Thai Kitchen now offers an Instant Rice Noodle Soup. It comes in a few flavors (I sampled the Thai Lemongrass and Chili one) and you can buy it in a bowl or package. I bought the package at Whole Foods and it took a few min to boil the water and 3 minutes to cook the noodles. By itself, there isn’t much flavor or sustenance, but I added a few eggs and chili powder. Overall, this was a good substitute and a quick and warm meal.

Bob’s Red Mill GF Baking Products

I use Bob’s Red Mill GF flours, oats, xanthan gum and various mixes for brownies, corn bread and even pizza crust. In my opinion, the GF baking products taste the closest to the real thing. In the Bay Area, I’ve found them in stores including Raleys and Whole Foods, but you can find more online. I’ve purchased the cornbread in bulk on amazon.com because it’s cheaper and because it sells out quickly around the holidays (hello, cornbread stuffing!).

Spaghetti Squash with Meat or Marinara sauce

My friend Jennie gave  me this recipe and she’s a pretty good cook, so I think you’ll enjoy it!

Prep Time: 20 minutes
Cook Time: 30 minutes for squash, 10 minutes to finish off dish
 
Ingredients:
1 spaghetti squash
olive oil
salt
pepper
1 jar marinara sauce (or home made)
ground turkey, beef, or italian sausage (optional) – this ingredient can be omitted for vegetarian option
1chopped garlic clove
1 chopped onion
parmesan
shredded mozzarella (optional)
ricotta (optional)
 
Directions:
Preheat oven at 400 degrees.  Cut the spaghetti squash in half and remove the seeds.  Boil in lightly salted water for 25-30 minutes, or until fork tender.  In a separate sauce pan, saute onions, add garlic, brown the meat, and add the marinara sauce. Put the spaghetti squash on a bake safe platter. Use a fork to shred the squash. Drizzle olive oil, add salt/pepper over squash.  Spread a layer of ricotta on squash (optional). Pour meat/marinara sauce over squash.  Sprinkle mozarella (optional) and shave parmesan. Throw the dish back in the oven at 400 degrees for about 10 minutes or until the cheese is melted.  Voila!
 
SPEEDY VERSION:  Instead of boiling, put the squash halves in a microwave safe dish, fill dish with 1/2 inch of water, cover with plastic wrap, and microwave for 10-12 minutes or until fork tender.  Instead of putting the dish in the oven to finish off the dish, throw it in the microwave for 2-3 minutes or until cheese is melted.

La Mar Cebicheria Peruana at Pier 1½ San Francisco

La Mar is located on the San Francisco waterfront, right next to the Ferry Building. The Peruvian restaurant is in a restored ferry building and houses a spacious seating area inside and out. The food was fantastic, including the cebiche (like ceviche) and Japanese style rolls. Shaun and I went here on Christmas Eve with our family and we told the waiter about our gluten intolerance. He was very accommodating and went back to the chef to figure out which foods would work or could be altered. Everything we ordered was delicious and we stuck to ordering fish, raw and cooked, given seafood is the specialty. We split many dishes, sharing them family style. We went for lunch and the cost was about $40 per person. This includes a bottle of Rose and a few beers.

The ambiance is nice, but we  dressed casually. The modern decor in blue hues with palm trees and a water view make you feel like you’re on a vacation seaside. I will definitely be back in the near future!
