Gluten-Free Pumpkin Cake Mix

Simply Organic makes a delicious and moist pumpkin cake mix. I made a cake using the mix and added a half cup of walnuts and topped it off with cream cheese frosting. If you’d like to make a two layer cake, buy two boxes of mix. One box makes a thin 9 inch round cake.

Vietnamese Stuffed Tomatoes Recipe

Here is a quick and easy recipe from Jennie Lieu!

 Ingredients:
6-8 tomatoes
1 package ground turkey (1-2 lbs)
1 finely chopped onion
minced garlic to taste
GF fish sauce (substitute with GF soy sauce or salt)
black pepper
GF clear vermicelli noodles (optional)
2 eggs
 
 
Instructions
1) Slice the tomatoes in half, and use a spoon to carve out the meaty middle to create cup shapes
2) In a sauce pan, sauté the onions and garlic until soft and brown. Set aside.
3) In a large mixing bowl, add the ground turkey, crack the 2 eggs, onions, garlic, 8-10 dashes of fish sauce (or 1-2 teaspoons of salt), cracked blacked pepper, vermicelli noodles.  Mix well with a fork. 
4) Stuff the tomato halves with the mixture making sure to pack it tightly with a fork.
5) Heat a large frying pan on medium-high and cook the tomatoes with the mixture side face down for 6-8 minutes.  Then flip and cook for an additional 6-8 minutes.
6) Serve the stuffed tomatoes with steamed rice or eat it as is!

Quick and Easy GF Red Velvet Cupcakes – Just in time for Valentine’s Day!

Make GF red velvet cupcakes using your favorite gluten-free yellow or white cake mix!

Ingredients:

  • 1 package of yellow or white GF cake mix
  • 1 package instant vanilla pudding mix
  • 4 eggs
  • 1 oz red food coloring or 1 tube of gel coloring
  • 1/2 cup of vegetable oil
  • 1 cup water
  • 1 tablespoon distilled white vinegar

For the frosting (you can also buy this already prepared):

  • 2 x 8 oz packages of cream cheese, at room temperature
  • 1/2 cup butter, at room temperature
  • 2 cups of confectioners’ sugar
  • 1 teaspoon vanilla extract

Directions for the cake:

  • Preheat the oven to 350 degrees F
  • Line a cupcake pan with muffin papers (makes approximately 17 cupcakes)
  • Mix the cake mix, pudding, eggs, oil, food coloring, water, and vinegar
  • Pour into muffin papers
  • Bake for 20-22 minutes
  • Let cupcakes cool before frosting

Directions for frosting:

  • Mix the cream cheese and butter until creamy
  • Mix in the vanilla and slowly add the confectioners’ sugar
  • Spread on cupcakes and refrigerate

Glutenfreeda Instant Oatmeal

Bob’s Red Mill has sold GF rolled oats for some time now, but Glutenfreeda is the first GF instant oatmeal I’ve found. The instant oatmeal comes in many flavors that taste similar to traditional instant oatmeal. Although Glutenfreeda includes flax in the oatmeal, I add walnuts and raisins to make it a hearty meal.

Get baking! King Arthur Flour makes GF Muffin Mix

I recently discovered this new, King Arthur Flour brand of GF baking mixes, at Whole Foods. I decided to pick up a box of the muffin mix. The mix is plain, but I added in mini chocolate chips and walnuts. As with most cake or muffin mixes, it only took five minutes to prepare and less than twenty minutes to bake.  The muffins were moist and, unlike other GF brands, did not crumble and fall apart as soon as touched. You can even freeze the muffins if you aren’t going to eat them within three days of baking.

Woodstock’s offers GF pizza

Woodstock’s Pizza now has a pizza with gluten-free crust that you can order for just $2 more than a regular large pizza. I stopped by the Davis, CA restaurant on my way down from Tahoe. I ordered a pesto vegetarian pizza and it was probably the best GF pizza I’ve ever had! Check out their website at: www.woodstocksdavis.com.

Atkins diet friendly GF recipe – grilled eggplant lasagna

My friend Jennie Lieu was doing the South Beach diet for a few weeks and found that many meals were gluten-free.  Here is the first of a few of her favorite GF recipes!

 GRILLED EGGPLANT LASAGNA

Ingredients:

  • 1 whole eggplant (the American kind, not Japanese)
  • Ground turkey – 1 lbs
  • Marinara sauce of your choice  – 1 jar
  • Red Wine – 1-2 cups
  • mushrooms – as many as u want to add – about 10?
  • 1 onion
  • 2 cloves of garlic
  • Fresh mozzarella – sliced 1/4 inch thick
  • Grated parmesan
  • Ricotta (optional)

 Instructions:

1) Preheat oven to 400 degrees

2) Chop garlic, onion and sauté  in a pot.  Add the ground turkey, salt, pepper.  Add the marinara sauce, and wine.  Let simmer while you’re assembling the rest of the ingredients.

3) Slice the eggplant into 1/4 inch thick slices and grill for about 5 minutes each side or until soft, tender. Put aside.

4) In a greased baking dish (I use Olive Oil spray), ladle a spoon of the sauce.  Then layer the grilled eggplant (overlapping at the edges).  If you are using ricotta, spread a very thin layer of ricotta on the eggplant.  If not, you can skip this step.  Next, ladle another layer of sauce.  Repeat steps starting with grilled eggplant until you use up all the eggplant.  For the last layer, place the fresh mozzarella slices on top.  

5) Place in the oven for about 10-15 minutes to heat through.  In the last 5 minutes, change the setting to broil to brown the stop.  

6) Grate some parmesan on top and voila! Enjoy with your favorite red wine.   Great recipe for making ahead for larger dinner parties!

Miglet’s in Danville

Miglet’s has a great variety of baked GF (and some vegan) goods, including Quiche, egg sandwiches, cupcakes and cookies. I picked up a chocolate chip cookie, the egg, ham and cheese sandwich, and a red velvet cupcake. They were all very good and I will be going back!

To purchase the goods, you can stop in the Danville store, or at a few Bay Area locations, or order some  over the phone.

Kara’s GF Cupcakes in Napa and the Bay Area

The Bay Area based Kara’s Cupcakes offers daily selections of GF cupcakes. On Saturday I stopped by the stand in the Oxbow Public Market in Napa and picked up a two white cupcakes and a chocolate cupcake with coconut frosting. I had to wait a few hours for the fresh-baked cupcakes as they weren’t available until after 1:00 PM. Call the shop to see what flavors of GF cupcakes are available. You can also order the cupcakes online.

If you visit the Oxbow Public Market, you can also find GF food at food stands and at Gott’s Roadhouse (formerly Taylor’s Automatic Refresher).

GF Grilled Cheese at The American Grill Grilled Cheese Kitchen, San Francisco

If you’re craving comfort food at lunch, The American Grill Grilled Cheese Kitchen, in SOMA offers a variety of sandwiches that can all be made on gluten-free bread. I made the fifteen minute trek from the Financial District to the restaurant, at One South Park Avenue, San Francisco. The first sign that this was a good restaurant was the 15 minute line forming outside.

I ordered the small turkey grilled cheese sandwich and salad plate and my friend ordered a full size ham and cheese sandwich. Both sandwiches were actually the same size and came with a piece of fruit. The GF bread was delicious and wasn’t as crumbly or chewy as many GF breads. I’d recommend a trip to this restaurant!
